我的家乡是临沂南部，人称粘泥湖。因种水稻，所以沟沟渠渠比较多。前些年，我们都是用的沂水和蒙阴水库里的水。每到春天，到了春稻泡田和小麦浇返青水的时侯，上游就放水了，那个时候的水没有汚染，水非常的清，各种鱼类也非常的多。
到了夏季开始，直至秋后沟渠没水时，这期间，有很多人用地笼去抓黄鳝和泥瞅，因为这两种鱼类有共同的生活习性，晚上到夜间行食，所以就一起抓到了。具体操作方法如下，首先要挖好蚯蚓用细铁丝穿起来，鸡肠子也可以，方法是一样的，穿好之后固定在地笼里。黄鳝和泥鳅就自动钻入地笼里去了。
选好适合下地笼的沟渠，水不要太深，因水渠小，水浅，经过阳光照射，水的温度非常适合黄鳝和泥鳅的生长和适合下地笼。一般都是头天晚上放进去，到了第二天早晨去把它取回来就可以了。
泥鳅和黄鳝都是营养价值非常高的鱼类。黄鳝有调节血糖，补虚益气，补脑益智的功效。

下面我来介绍我的吃法和操作方法：由于泥鳅身体很滑，无法象其它鱼类那样破肚，别人用的是开水烫。我用食醋，就是把泥鳅放入盆内，上面准备好锅盖，把醋倒进盆子里，量根据泥鳅多少，只要每条泥鳅身上能沾到醋就可以了。倒完醋立即盖上盖，几分钟就可以了，这样的泥鳅身上就不粘了。用剪子剪去头和尾，破肚清肠，洗净，每条泥鳅根据大小，剪成2一3段就可以了。炒时根据自己喜好口味，放入材。我是放的大蒜，生姜，酱油，醋，料酒，盐，葱花青椒+红椒。炒好后味道极鲜。另外也可以先过油，用鸡蛋烧汤，总的吃法很多，根据个人口感去做就可以。
